Last
weekend I did a very special wedding cake for very special friends of mine.
They wanted to have an all white innocent cake with a big bow on top and
pearls. We decided to do a two layer cake and I started with preparing the marshmallow
fondant (mmf) a week in advance. The hardest part was to roll 120 pearls,
covering them with pearly shimmer-dust and creating a big bow out of mmf. This
took me probably about three episodes of Greys Anatomy ;-) Ahhh, time goes by
fast, if you are having fun :-P
My
friends are a lil funky and longed for an even funkier wedding cake. So I
decided to make the inner part of it absolutely different to the white
covering. The cake should, when cut from bride and groom, shock the guests and
make them wanna eat it asap. This could only come true with a shiny bright RAINBOW
CAKE. And it did ;-)

On Thursday
I began with baking the seven brightly colored layers for the rainbow cake and
even managed to bake the sponge cake before joining a pre-wedding party. On
Friday the shenanigans began…Not only that I was all tired and exhausted, the
whole part of filling and decorating was ahead of me.
I started
with filling the rainbow cake with a yummy cream cheese frosting. While this
cake started to get cold in the freezer, I prepared the strawberry-vanilla
cream for the upper part of the cake. Just a spoonful of this filling and you
melt away…ahhhh, heaven.
After the
cakes were cool enough, I covered them with the leftovers of my cream cheese
frosting and made them fondant ready. Speaking of it, the fondant part was
easier than expected and covering the two cakes turned out to be very good!
I glued the
pearls around the two layer making them look like a necklace for the cake. The
upper layer was supposed to look like a present, so I put mmf-ribbons and the
big bow on it. Thanks to sugar-glue the decorations stuck to the cake very
well. For personalizing the wedding cake, I created the initials of the names
of my friends and glued them on the ribbon. And that was it. Working from
Thursday to late Friday night finally ended up in a beautiful and tasty cake.
